Pulse Canada involved in the coordination a special session on pulses during the Institute of Food Technologists (IFT) Wellness conference March 28 and 29, 2012 in Chicago. The title of the session “Health for Better Living with Pulses”. During the session, the sustainable, nutritional and healthful aspects of legumes framed within a view of the 2010 US Dietary Guidelines and recent clinical research. This session new consumption data for pulses using the most recent US National Health and Nutrition Examination Survey (NHANES) database. Numerous food application ideas presented as incentives to increase the variety of foods that may lead to increased daily consumption of these flexible legumes. Lastly, opportunities provided for creating successful approaches towards consumers to increase the likelihood of success in increasing pulse consumption in North American diets.
