On February 4th and 5th in Toronto, the Canadian pulse industry released the results from seven human clinical studies examining the link between eating pulses and positive health outcomes related to CVD, diabetes, obesity and gut health at the 2nd Pulse Health and Food Symposium. In addition to the results of the clinical trials, conference participants heard presentations on how pulses meet consumer demands for nutritious and healthy food products with high fiber, high protein, low fat and gluten free characteristics, and how pulse ingredients can be used in food applications such as crackers and snack foods, bakery products, beverages, meat applications, pastas and more.
