Pulse Canada and the Saskatchewan Pulse Growers’ Association sponsored the pulse product development competition at the University of Saskatchewan on April 8th, 2011. Four teams participated in this year's competition. Here are the winners:


First place went to Kaipeng Yu, Erin Berscheid and Caitlin Olauson of Rec Boy Inc. for "Benny Bar". "Benny Bar" is a pulse bar designed to deliver the health benefits of lentils and chickpeas in a convenient and delicious form. The chickpeas are air-roasted to provide a nutty flavor and texture and are chocolate coated. Whole lentils comprise the bulk of the bar and it is also a source of fibre.


2nd place went to Jae Hee Kim, Trevor Martens and Sheryl Serdachny of Rain Foods. The "Gushing Grape YoPop" is made with a smooth tasting vanilla yogurt blended with a bold grape flavoured juice and fortified with chickpea flour.


3rd place went to Matthew Bernard, Lamlam Cheung, Yu Liu and Xiakun Yuan of Jiggling Moose Inc. This product is a strawberry flavoured mousse that is fluffy and spongy in texture with chunky strawberries suspended in the matrix. The mousse contains pea starch and pea fibre, making it a good source of fibre.


Another great product from the Saskatchewan competition was developed by Zenan Wang, Shanna George and Trevor Kwan of Zetrena Inc. Inspired by a Japanese dessert, the Berry Smoothie is an innovative smoothie made with a white bean paste blended with strawberries, blueberries, raspberries and blackberries. This product is high in fibre. The low taste profile of bean paste and its smooth texture allows for the discrete inclusion of pulse ingredients.
