Pulses & the Future of Food
The Canadian pulse industry strongly believes that trends toward health, sustainability and economic prosperity will shape future food systems. Awareness of the interplay between dietary choices and environmental sustainability is growing and some governments and NGOs are advocating for a shift in dietary patterns towards improved health and sustainable consumption.
Pulses will be an important ingredient in the transformation of food systems to provide consumers with healthy and environmentally sustainable dietary choices. Pulses are an affordable and sustainable source of dietary protein and have been shown to be an effective dietary strategy for reducing risk factors for diabetes and cardiovascular disease. From an environmental perspective, the incorporation of pulses into cropping systems can reduce GHG emissions and improve soil quality. These sustainability benefits are carried through the food chain and lower the carbon footprint of food products made with pulses, pulse ingredients, and other ingredients produced from cropping systems that include pulses.
